Quick and Easy Pozole Recipe

Quick & Easy Pozole Recipe

I never even heard of Pozole until I got a container of Ocean's Halo Pozole Broth to try. The back of the container simply said to heat the broth to the desired temperature and basically add whatever you want, so I did some more research online to see what typically goes into Pozole, and then I made it my own!



Makes about 4-6 servings.
Time: ~15 - 30 mins

Ingredients:

  • 1 container of Ocean’s Halo Pozole Broth (32oz)
  • 1lb boneless diced pork or pork stew meat
  • 1 small sweet or yellow onion
  • 1 bag frozen corn (~12oz cooked) or 1 can of corn (~15.25oz)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can beans (15oz) drained 
    • white kidney, red kidney, black, or whichever bean you like, can even mix beans
  • Pepper or hot sauce to taste
  • Shredded cheese and/or lettuce to taste

Feel free to adjust the amounts to your liking! The amounts are only there to give you an idea of what I used. 


Instructions:

Step 1: Chop/Dice onion


Step 2: Brown pork in a pan


Step 3: Add broth to a saucepan with onions, pork, corn, tomatoes, beans and cook on medium heat till the desired temperature


Step 4: Season with pepper or hot sauce to taste


Step 5: Top with cheese and/or lettuce and enjoy!



Vegan Option: Can be made vegan! Just leave out the pork and cheese!
